As a youngster in the 1950's my mother always insisted that I ate the beetroot when we had salad, I often left the lettuce and those horrid radishes.
But I loved the Beetroot, for me, always a great favorite in salads and fairly easy to grow. I'm surprised more gardeners do not grow them in their vegetable plots. The issue for some I believe is the cooking and making it ready for pickling.
