I have known that there are several varieties of squash but I have to confess I had not heard of the Cinderella Pumpkin. It is sad that so many of our old original vegetables and fruits have been changed by the seed companies to where we don't recognized them anymore. We love pumpkin and squash and use it regularly. I taught my daughter to love summer squash by substituting noodles for squash in my favorite Lasagna recipe. A very tasty dish!!!


The White Scallop squash is a Native American heirloom, grown by Indians in the Northeast for hundreds of years.
