I have not had yucca in a long time. Thanks for the reminder and the recipe! It looks great! I also love nopales (cactus), particularly in scrambled eggs.

I am not a fan of the Yucca(twice a week side dishes growing up), but this Chulitos looks very appealing and would consider trying it again. Great to see Hispanic Heritage month celebrated.
