Tarragon might be like cilantro, you either have the "gene" for it or not. I certainly love it, and the way you describe how the chicken came out makes me want to try it myself.

I love that you're doing a recipe a week! Chicken with Tarragon is on my to-do list.

French tarragon has a hint of aniseed to it's flavour, not as distinctive as fennel though, and when tasted raw, it leaves your tongue slightly numb, which is a sure indicator that it is really French tarragon, and not it's lesser cousin, the Russian tarragon.
